Why Grease Traps Require Regular Service

Grease traps are box-shaped plumbing devices within the drain line between kitchen sinks and the sewer system designed to catch waste greases and solids. They range in capacity from 10 gallons to 12,000 gallons or more and help minimize the amount of fats, oils and greases that enter the main sewers or septic system.

Small amounts of oils in waste water that enter septic tanks and treatment facilities are slowly broken down by microorganisms in the anaerobic digestion process. However, very large amounts of grease from restaurant kitchens can overwhelm the septic tank or treatment facility, causing clogs and backup of raw sewage.

Also, many fats and cooking greases solidify when cooled and can combine with other waste solids to form blockages in drain pipes. There are two types of grease disposal: waste vegetable oil (yellow grease) and brown grease. Waste vegetable oil is the used oil collected from deep-fryers. Waste vegetable oil is typically collected for recycling or conversion into biodiesel fuels. Grease traps work to collect brown grease. Brown grease consists of spoiled food solids combined with fats, oils and grease. Brown grease is pumped out of the traps by grease pumping trucks and hauled to a waste management facility.
